Winter


A few things for Winter ~

- reading: dominoHerbal Healing for WomenA Kitchen in France: A Year of Cooking in My Farmhouse,
The Diving Bell and the Butterfly


- listening: Bob Seger, You'll Accompany Me

- using: Clary Balm - soothing salve for my face and lips

- planting: Chamomille & cilantro, basil, parsley, rosemary, lavender & thyme to make Winter dishes even better & prepping for a huge garden, honeybees & raising rabbits for meat this Summer!

- collecting: All the pretty antiques for my dresser

- watching: The Unbearable Lightness of Being, A Crime To Remember

- working on: Very recently I have been managing the social media for a non-profit supporting AIDS orphans in South Africa. Follow along and support these women, children and their communities! New website coming soon!

- making space for everything I learned while in Chile and Argentina: expectations, traveling alone, shifting priorities, disappointment, ego, kindness from complete strangers, family, communicating without language, the reality that traveling *can be* uninspiring and tiring......hard but needed passage for what's next. 

Leaving you with my favorite cozy Winter recipe for Pork Vegetable Curry ~ 

roasted pork shoulder
acorn squash - peeled & cubed
mushrooms, red pepper - chopped
green beans - whole
sweet onion - sliced
garlic and ginger - chopped
turmeric
coconut milk
red curry paste

Saute a little coconut oil, garlic and ginger until garlic is soft. Add the red curry paste and cook for a minute or so. Add the already cooked pork, squash, green beans, mushrooms, red pepper and onion. Stir to coat with the curry paste. Then add the coconut milk and turmeric. Stir to combine and bring to a simmer over medium heat. Turn heat to low and let simmer uncovered for another 15 minutes. Add salt and serve with jasmine rice and basil.
